Great question, and there's only one answer: for your safety! A jack is made ONLY for lifting the car. We never work under a car if it's supported only by a jack, because hydraulic systems can always lose pressure. Once you lift the vehicle, you put the jack stands underneath, lower it to "sit" securely on them, and then you can work with 100% peace of mind!
These numbers indicate the maximum weight (in Tons) that each stand can safely support. If you work with small or medium passenger cars, 2T or 3T stands will cover you completely. But if large SUVs, vans, or light trucks come into your workshop, then you definitely need to go for the 6T "beasts" to have peace of mind.
